The hygiene rating that keeps you on the apps, and the records behind it
For a takeaway or a delivery-only kitchen, the food hygiene rating is not a sticker in a window nobody reads. It sits on your listing next to the menu, and the platforms delist you if it falls too far. The kitchens we see lose ratings not for dirty pans but for missing paper: no record of the rice cooling, no allergen information the courier could hand over, a diary that stopped in June. Hubl puts the checks on the phone that is already in the kitchen, and when the new starter has a question during the Friday rush, Orbit, Hubl’s AI assistant, answers it from your own records.

Why the rating matters more here than anywhere
A restaurant with a 3 loses a few walk-ins. A takeaway with a 1 loses its income, because the apps are the front door.
1 The platforms set a floor
Deliveroo and Uber Eats require partners to hold, or be waiting for, a rating of 2 or above and remove kitchens that fall below it. Just Eat asks for a 3 from new partners and shows the rating on the listing. Customers see the number before they see the food.
2 Three scores, one usually to blame
Hygiene, structure and confidence in management. In our experience takeaways rarely fail on the first two; they lose the rating on the third, which is records, training and whether the officer believes the system runs when they are not there.
3 A dark kitchen has no shop front to save it
No regulars, no word of mouth, no window sticker. A delivery-only kitchen’s reputation is its rating and its platform reviews, and both are shared across every virtual brand cooked from the same unit.
What the EHO spends their time on in a takeaway
The findings that come up in almost every takeaway and delivery-kitchen inspection we have prepared a client for.
- ✓Rice, and everything else that cools slowly. Cooked rice left out for the evening is the takeaway finding. Into the fridge within 90 minutes, portioned and in shallow trays, or kept hot at 63°C or above, with the time written down either way.
- ✓Allergen information that travels with the order. For distance selling the law is specific: allergen information must be available before the customer buys, on the app or the website, and again when the food is delivered, on a label or a slip in the bag. A 14-allergen matrix that matches what is actually being cooked tonight is the only way to keep both right.
- ✓Raw and ready-to-eat in a small space. Marinating chicken next to the salad prep, one board for everything, cloths that do the whole kitchen. Officers look at separation and cleaning first because the unit is small and the throughput is high.
- ✓Hot food waiting for a courier. Delivered hot food should still be hot, and the bag on the counter for twenty minutes at peak is where it stops being. Officers ask how long orders wait and what happens to the ones the courier never collects.
- ✓Shared units and virtual brands. In a delivery hub, who cleans the shared areas, who owns the pest contract and which brand a complaint belongs to are all questions with a records answer. If three brands cook from one kitchen, the allergen matrix has to cover all three.
- ✓Training for a team that changes weekly. Food handlers must be trained and supervised for the work they do; officers expect Level 2 or equivalent for anyone cooking and an induction record for everyone else, in a language they understand.
How Hubl fits a takeaway or dark kitchen
Built for a kitchen where the owner cooks, the team changes, and the phone on the shelf is the only computer in the building.
Opening and closing checks in a few taps
Fridges cold, handwash stocked, dates checked, boards and cloths clean, rice cooled and dated: a tap-through list at the start and end of every shift, timestamped and recorded against whoever did it. See the digital diary.
Cooking, cooling and hot-hold temperatures with the target built in
Probe the chicken, the rice and the hot hold, type the number, and a reading out of range prompts for the corrective action there and then. The record shows the officer a system that catches its own failures. See temperature logs.
One allergen matrix for every brand on the menu
Tag allergens once per product and every dish across every virtual brand updates. Contains and may-contain kept separate, a history of changes, and the record behind what goes on the app and in the bag. See allergen management.
Training, suppliers and the pest contract in one place
Certificates for a team that changes, supplier details and delivery records, the cleaning schedule and the pest control paperwork, stored where the officer can be shown them in a minute. See document storage.
Evidence for the re-rating visit
When you ask the council to come back and re-score, the dashboard shows weeks of completed checks, failures and fixes at a glance, which is the confidence-in-management score in one screen. See the reporting dashboard.
Orbit, for the Friday rush
Hubl’s AI assistant answers from your own records: which dishes contain peanuts, what to do with rice that has been out for two hours, which checks were missed this week. The answer is there for the new starter without stopping the pass. Meet Orbit.

What kitchens like yours say
Both of these came off the back of an inspection.

“We are thrilled to have received the highest possible food hygiene rating of five stars. The Hubl app has transformed the way we manage our food safety records, making it easier and more efficient than ever before. We are proud to say that we meet all the requirements for the EHO.”
Raj Rana, Owner, Itihaas
“Hubl has provided us with a centralised platform to streamline our food safety checks. The calendar function has been particularly beneficial — being able to organise and display all our records in one place has made EHO inspections seamless. With just a few taps, we can present comprehensive records.”

What food hygiene rating do I need to be on Deliveroo, Uber Eats and Just Eat?
Deliveroo and Uber Eats require partner kitchens to hold, or be waiting for, a Food Hygiene Rating of 2 or above, and say they remove kitchens that fall below it unless they can show improvements. Just Eat asks new partners for a 3 (or a Pass in Scotland, or awaiting inspection) and displays the rating on the listing. The policies change, so check the current terms, but the direction is the same on all three: the rating decides whether you trade. A kitchen that drops to a 1 has weeks, not months, to fix it.
How do I get my food hygiene rating re-scored after fixing the problems?
Once you have dealt with the issues in the officer’s report, you can ask your local authority for a re-rating visit rather than waiting for the next routine inspection. Most councils in England charge a fee for it; in Wales and Northern Ireland the process is set out in the scheme. The visit is unannounced within a window, and the officer scores the kitchen from scratch, so the records have to show the fixes have been running for weeks, not since yesterday. You can also use the right to reply on the FSA website to explain what you have done in the meantime. Our guide to improving your food hygiene rating goes through the scoring in detail.
What are the allergen rules for delivery and takeaway orders?
Food sold at a distance, through an app, a website or over the phone, has two allergen moments and both are legal requirements: the information must be available before the customer completes the order, and again when the food is handed over, which in practice means a label, a slip in the bag or clear information on the packaging. A blanket “may contain” on the app is not enough; it has to say which of the 14 allergens each dish contains. Food packed on the premises before it is ordered, a pre-made dessert in the fridge, is prepacked for direct sale and needs a full ingredients label as well.
How long can cooked food wait for a courier?
Hot food should be kept at 63°C or above until it leaves, and delivered hot. It may fall below 63°C for a single period of up to two hours, after which it must be reheated to 75°C once or thrown away, and orders that a courier never collects should not be resold. Cold food should stay at 8°C or below. Officers ask what the longest wait at peak is and where orders sit while they wait; a hot-hold with a temperature check and a written time-out rule is the answer they want to see.
Who is responsible for food safety in a shared dark kitchen?
Each operator is a food business in its own right, registered with the council and rated on its own unit, even inside a hub run by a platform or a landlord. The shared parts, the corridors, the waste area, the pest contract, the extraction, are usually the hub’s responsibility under the lease, but the officer inspecting your unit will still ask how you check them and what you do when they fail, so get the split in writing and keep your side of it recorded. If you cook several virtual brands from one kitchen, they share one rating and one set of records.
What does Orbit do in a takeaway kitchen?
Orbit is the AI assistant built into Hubl. It answers from your own records, product information and safe methods rather than from the open internet, so it knows which dishes contain peanuts, what the corrective action is for rice that has been out too long, and which checks were missed this week. For a takeaway that means the new starter or the driver-turned-cook gets the right answer in the middle of the Friday rush without stopping the pass, with the reason behind it, and the owner is not the only person who knows how the kitchen is supposed to run. Meet Orbit.
